ross hill extra virgin olive oil is made from ripe and semi-ripe olives from nine and ten year old Frantoio, Corregiola and Manzanilla trees.
A new grove of Arbequina trees will provide fruit to produce a highly sought-after varietal extra virgin olive oil.
The olive trees are grown on the gentle, east-facing slopes at ross hill in the cool climate conditions of Orange, in the central-west of NSW. The fruit is hand picked and immediately cold pressed to ensure full flavour and aroma.
Irrigation water efficiency is significantly improved through a program of strategic mulching and by following WaterWise management principles. The use of beneficial insects is used wherever possible to maintain natural control of harmful insects and to provide consistent conditions in which the trees develop naturally and bloom.
The unfiltered oil has a full-bodied flavour with a delightful aroma of cut grass. The taste moves on to a peppery finish … delicious for drizzling on salad leaves and for use on modern Australian cuisine. |
