"Thai cooking is a passion of mine; these flavours invaded and colonised my palate years ago and the influence on my wine making is easy to see. Supple textures, cool, zest flavours and long, soft, silky finishes where what we strove for in the whites of youthful charm. Sailors Thai gave us carte blance to mould the structure of the wine to allow it to sit precisely where it should, to complement the food yet provide its own heady pleasure.
